Mimosa cupcakes

I have been meaning to post these cupcakes since NYE, but I have been so busy!

I made my first adult cupcakes for New Years Eve this year! I'm not a big drinker, so I was nervous about making cupcakes with alcohol, but these were delicious! The batter contained less than a cup of champagne, and the frosting contained a few teaspoons, so it worked out great! I took them to a New Years Eve party, where one person said they tasted like breakfast. I think that was because the recipe also included orange juice and the grating from an orange peel.

I didn't go all out in decorations with these. I considered making fondant stars, but decided I wanted something simple. I chose sprinkles that reminded me of champagne. These cupcakes were so moist! I can't wait for the excuse to make them again.
