But, enough of what I WAS doing. Here is what I made today! Blue velvet cupcakes with cream cheese frosting and a blueberry on top. These cupcakes were not made from scratch, I happened to pick up this box mix just because I was curious on what blue velvet tastes like (which is a lot like red velvet, but more vaniilla-y). My frosting, as always, was homemade though. I also struggle with cream cheese frostings. But, this one I found online and then tweaked it and it's fluffy and creamy and amazing.
I think I will bake again this week if I get a chance. I missed sharing my cupcakes with everyone. I need to get back to doing it. :o)
